Aloha Tuna Shakshuka

Aloha’s Tuna Shakshuka Recipe:

Ingredients:

  • 1 can ( 185 gm) of light meat canned tuna,
  • 1 onion, finely chopped
  • 2 bell peppers, diced
  • 2 cloves garlic, minced
  • 1 can (about 400g) crushed tomatoes
  • 1 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
  • Salt and pepper to taste
  • 4-6 eggs
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions:

  • Heat oil in a large skillet or frying pan over medium heat.
  • Add Aloha canned Tuna with chopped onions and fry until softened and translucent.
  • Add diced bell peppers and minced garlic. Cook until the peppers are tender.
  • Stir in ground cumin, paprika, ground coriander, cayenne pepper, salt, and pepper. Cook for another minute to toast the spices.
  • Pour in the crushed tomatoes and bring the mixture to a simmer. Allow it to cook for about 10-15 minutes, or until the sauce thickens.

Finally Create small wells in the tomato-Aloha tuna mixture and crack the eggs into each well. Cover the pan and let the eggs poach in the simmering sauce for about 5-7 minutes, or until the egg whites are set but the yolks are still runny. Once the eggs are cooked to your liking, sprinkle fresh cilantro or parsley over the top. Serve the Aloha Tuna Shakshuka hot with crusty bread or pita on the side. This dish is not only delicious but also provides a unique twist to the traditional Tuna shakshuka by incorporating Aloha tuna for added protein and flavor.
