Aloha Tuna with Broccoli and Boiled Eggs:

Ingredients:

  • 2 cans of Aloha tuna, drained
  • 2 cups of fresh broccoli florets, steamed or blanched
  • 4 to 6 hard-boiled eggs, chopped
  • 1/2 red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice (optional)
  • Salt and pepper to taste

Instructions:

  • Start by preparing the hard-boiled eggs. Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat and simmer for 9-12 minutes, and chop them into small pieces.
  • Steam or blanch the broccoli florets until they are tender but still crisp, about 3-5 minutes. Plunge them into ice water to stop the cooking process.
  • On a plate, put the drained tuna, chopped boiled eggs, broccoli, and finely chopped red onion.
  • In a separate bowl, mix the mayonnaise, Dijon mustard, and lemon juice. This will be your dressing. Adjust the amount of mayonnaise to achieve your desired creaminess. Season with salt and pepper to taste.
  • Pour the dressing over the tuna, broccoli, and egg mixture. Gently toss everything together until it’s well coated with the dressing.
  • Taste the salad and adjust the seasoning if needed.
  • Serve the Tuna Salad with Broccoli and Boiled Eggs as a side dish, on a bed of greens, or in a sandwich. Enjoy!
