What is canning liquid, and why do we wash it?

Canning liquid is the fluid in which mushrooms are packed inside the can. It usually contains:

  • Salted water or water with natural preservatives

  • A portion of the mushroom’s flavor that develops during storage

However, this liquid does not add a positive flavor to dishes. In fact, it may sometimes add excessive saltiness or an undesirable “preserved” taste, especially in creamy dishes or those with cheese.

How to properly wash canned mushrooms:

  1. Open the can and drain the liquid completely.

  2. Place the mushrooms in a strainer and quickly rinse them with cold water.

  3. Let them drain well before cooking, or use a paper towel to dry them.

By following these steps, you’ll get mushrooms with a purer flavor and better texture when cooked.

Are there any exceptions?
🔹 If you’re using the mushroom liquid to make soup or a rich broth, you may keep some of the canning liquid to add flavor.
🔹 But in most cases, washing improves the final result.
